Zuppa Toscana Soup (Instant Pot or Stovetop)

A delicious and hearty Zuppa Toscana Soup that can be made using either an Instant Pot or stovetop. Packed with flavorful ingredients like turkey bacon and chicken ham.

Ingredients

  • 6 slices turkey bacon
  • 1 pound chicken ham
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups kale, chopped
  • 2 medium potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. In an Instant Pot, cook the turkey bacon until crispy, then remove and set aside.
  2. Add onion and garlic to the pot and sauté until translucent.
  3. Stir in the chicken ham and potatoes, and then pour in the chicken broth.
  4. Close the lid and cook on high pressure for 10 minutes.
  5. Quick release the pressure, then stir in the heavy cream and kale.
  6. Season with Italian seasoning, salt, and pepper. Crumble the bacon on top before serving.

Notes

  • This soup can also be made on the stovetop; simmer until all ingredients are tender.
  • For a thicker soup, mash some of the potatoes before adding the cream.
