  • 1 pound Italian sausage
  • 1 medium onion, chopped

  • 6 cups chicken broth
  • 3 medium potatoes, diced
  • 1 cup kale, chopped
  • 1 cup heavy cream
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon until crispy. Remove and set aside.
  2. In the same pot, cook the sausage over medium heat until browned.
  3. Add the onion and garlic, cooking until translucent.
  4. Pour in the chicken broth and bring to a simmer.
  5. Add the diced potatoes and cook until tender.
  6. Stir in the kale and heavy cream, cooking just until the kale wilts.
  7. Season with salt and pepper.
  8. Chop the turkey bacon and stir back into the soup before serving.
