A delicious and easy-to-make Zucchini Noodle Chicken Alfredo that combines the flavors of creamy Alfredo sauce with tender chicken and fresh zucchini noodles.

Ingredients

  • 2 medium zucchinis
  • 1 pound chicken breast
  • 2 tablespoons olive oil
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Spiralize the zucchinis into noodles and set aside.
  2. In a skillet, heat olive oil over medium heat and add the chicken breast. Cook until browned and fully cooked.
  3. Remove the chicken from the skillet and slice it into strips.
  4. In the same skillet, add minced garlic and sauté for 1 minute.
  5. Add heavy cream and Parmesan cheese to the skillet, stirring until the cheese is melted and the sauce is creamy.
  6. Add zucchini noodles and sliced chicken to the sauce, cooking for an additional 2-3 minutes until the noodles are tender.
  7. Season with salt and black pepper to taste before serving.

Notes

  • You can add other vegetables such as spinach or bell peppers for extra flavor.
  • For a lighter version, use half-and-half instead of heavy cream.
