Zucchini Lasagna Recipe (Adaptable for Vegans)

A delicious zucchini lasagna that’s perfect for vegan diets and easy to prepare.

Ingredients

  • 3 medium zucchinis
  • 2 cups marinara sauce
  • 1 cup ricotta cheese (or vegan alternative)
  • 2 cups shredded mozzarella cheese (or vegan cheese)
  • 1 egg (or flax egg for vegan)
  • 1 teaspoon Italian seasoning
  • Salt to taste
  • Ground black pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the zucchinis lengthwise into thin strips.
  3. In a bowl, mix ricotta cheese with egg (or flax egg), Italian seasoning, salt, and pepper.
  4. Spread some marinara sauce on the bottom of a baking dish.
  5. Layer zucchini slices, then spread the ricotta mixture, followed by marinara sauce and mozzarella cheese.
  6. Repeat the layering process until all ingredients are used, finishing with mozzarella on top.
  7. Bake for 30-35 minutes until the cheese is bubbly.
  8. Let it cool for a few minutes before serving.
