  • 2 cups grated zucchini
  • 1/2 cup turkey bacon, cooked and chopped
  • 1/2 cup all-purpose flour
  • 1/4 cup grated Parmesan cheese
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon paprika
  • 1/4 cup chopped fresh parsley

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the grated zucchini, turkey bacon, flour, Parmesan cheese, eggs, garlic powder, salt, pepper, paprika, and parsley.
  3. Mix until the ingredients are well combined.
  4. Scoop out portions of the mixture and form them into patties.
  5. Place the patties on the prepared baking sheet.
  6. Bake for 20-25 minutes, flipping halfway through, until golden brown.

Notes

  • For a crispier texture, you can pan-fry the fritters instead of baking.
  • These fritters can be served with a dipping sauce of your choice.
