Winter Harvest Dinner Bowl Recipe

A comforting winter dish that celebrates the bounty of the season.

Ingredients

  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 pound sweet potatoes, diced
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup kale, chopped
  • 1/2 cup dried cranberries
  • 1/4 cup walnuts, chopped

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a pot, combine quinoa and vegetable broth. Bring to a boil, then reduce heat and simmer until quinoa is fluffy.
  3. On a baking sheet, toss diced sweet potatoes with olive oil, salt, and pepper. Roast in the oven for 20-25 minutes.
  4. In the last 5 minutes of roasting, add chopped kale to the baking sheet.
  5. Combine cooked quinoa, roasted sweet potatoes, kale, cranberries, and walnuts in a large bowl. Serve warm.

Notes

  • This dish can be enjoyed warm or cold.
  • For added protein, consider adding chickpeas.
