  • 1 cup soft cheese (like queso blanco)

Instructions

  1. In a blender, puree the corn kernels until smooth.
  2. In a large bowl, combine the cornmeal, milk, sugar, salt, baking powder, and melted butter. Mix well.
  3. Stir in the pureed corn until everything is well combined.
  4. Heat a skillet over medium heat and grease lightly.
  5. Pour 1/2 cup of the mixture onto the skillet, cooking until bubbles form on the surface, then flip and cook until both sides are golden brown.
  6. Repeat with the remaining batter.
  7. Serve warm with soft cheese on top.

Notes

  • For a sweeter version, add an extra tablespoon of sugar.
