Vegetable Orzo Soup

  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 6 cups vegetable broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 2 cups spinach
  • Salt to taste
  • Pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the onion, carrots, celery, and garlic; sauté until the vegetables are tender.
  3. Pour in the vegetable broth and diced tomatoes, then bring to a boil.
  4. Stir in the orzo, oregano, and basil; reduce heat and simmer until the orzo is cooked.
