  • 2 cups tempeh, cubed
  • 2 cups vegetable broth
  • 1 cup red wine

  • 1 teaspoon thyme
  • 1 bay leaf
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add mushrooms, carrots, and pearl onions; sauté until Tender.
  3. Stir in garlic and tempeh, cooking until tempeh is browned.
  4. Pour in red wine, vegetable broth, and add soy sauce, thyme, and bay leaf.
  5. Bring to a simmer, cover, and cook for about 30 minutes.
  6. Season with salt and pepper before serving.
