Truffle Herb Butter Cornish Hens

  • 2 Cornish hens
  • 4 tablespoons truffle butter
  • 2 teaspoons fresh rosemary, chopped
  • 2 teaspoons fresh thyme, chopped
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 lemon, halved

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Pat the Cornish hens dry and season with salt and pepper.
  3. In a small bowl, mix truffle butter with chopped rosemary and thyme.
  4. Gently lift the skin of each hen and spread the truffle herb butter underneath.
  5. Place the lemon halves inside the cavity of each hen.
  6. Roast in the preheated oven for 1 hour or until the internal temperature reaches 165°F (74°C).
  7. Let the hens rest for 10 minutes before carving and serving.
