Tomato Tartlets with Puff Pastry

  • 1 sheet puff pastry
  • 2 medium tomatoes, sliced
  • 1 cup shredded cheese (mozzarella or cheddar)
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Roll out the puff pastry on a floured surface and cut into rounds to fit your tart tray.
  3. Place the pastry rounds in the tart tray and prick the bottoms with a fork.
  4. Brush olive oil over the pastry bottoms.
  5. Layer the sliced tomatoes on top of the pastry.
  6. Sprinkle the shredded cheese, Italian seasoning, salt, and pepper over the tomatoes.
  7. Bake in the oven for 25-30 minutes or until the pastry is golden brown and crispy.
  8. Serve hot or at room temperature.
