- 1 pound chicken breast, sliced
- 2 cups coconut milk
- 3 cups chicken broth
- 3 stalks lemongrass, sliced
- 5–7 kaffir lime leaves
- 3–4 slices galangal
- 1 Thai chili, smashed
- 1 cup mushrooms, sliced
- 2 tablespoons fish sauce
- 1 tablespoon lime juice
- 1/4 cup cilantro, chopped
- In a large pot, combine coconut milk and chicken broth and bring to a gentle simmer.
- Add the sliced lemongrass, kaffir lime leaves, galangal, and Thai chili to the pot. Simmer for about 10 minutes to infuse the flavors.
- Next, add the sliced chicken and mushrooms to the pot and cook until the chicken is fully cooked, about 5-7 minutes.
- Stir in the fish sauce and lime juice for seasoning.
- Remove from heat and garnish with fresh cilantro before serving.
Notes
