  • 2 cups coconut milk
  • 3 cups chicken broth
  • 3 stalks lemongrass, sliced
  • 57 kaffir lime leaves
  • 34 slices galangal
  • 1 Thai chili, smashed
  • 1 cup mushrooms, sliced
  • 2 tablespoons fish sauce
  • 1 tablespoon lime juice
  • 1/4 cup cilantro, chopped

Instructions

  1. In a large pot, combine coconut milk and chicken broth and bring to a gentle simmer.
  2. Add the sliced lemongrass, kaffir lime leaves, galangal, and Thai chili to the pot. Simmer for about 10 minutes to infuse the flavors.
  3. Next, add the sliced chicken and mushrooms to the pot and cook until the chicken is fully cooked, about 5-7 minutes.
  4. Stir in the fish sauce and lime juice for seasoning.
  5. Remove from heat and garnish with fresh cilantro before serving.

Notes

  • Adjust the level of spiciness by adding more or less Thai chili.
  • For a vegetarian version, replace chicken with tofu and use vegetable broth.
