Tiramisu Cupcakes Recipe

  • ½ cup granulated sugar
  • ½ cup unsweetened cocoa powder

  • ½ cup unsalted butter, softened
  • 2 large eggs
  • ½ cup brewed espresso, cooled
  • 1 tsp vanilla extract
  • 1 cup mascarpone cheese
  • ½ cup heavy cream
  • ¼ cup powdered sugar
  • 2 tbsp cocoa powder for dusting

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a mixing bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add the softened butter, eggs, espresso, and vanilla extract. Mix until well combined.
  4. Fill the cupcake liners about two-thirds full with the batter.
  5. Bake for 20-25 minutes, or until a toothpick comes out clean. Let cool completely.
  6. In a separate bowl, whip the heavy cream and powdered sugar until soft peaks form.
  7. Fold in the mascarpone cheese gently.
  8. Frost the cooled cupcakes with the mascarpone mixture.
  9. Dust the tops with cocoa powder before serving.

Notes

  • For an extra coffee flavor, add a shot of espresso to the frosting.
  • These cupcakes can be made a day in advance and stored in the refrigerator.
