A delicious and comforting lasagna soup that combines all the flavors of traditional lasagna in a hearty soup form.

  • 1 pound ground beef
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 4 cups beef broth
  • 8 ounces lasagna noodles, broken into pieces
  • 2 cups ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons Italian seasoning
  • Salt and pepper to taste

Instructions

  1. In a large pot, brown the ground beef over medium heat.
  2. Add the onions and garlic, and sauté until soft.
  3. Stir in the crushed tomatoes, beef broth, and Italian seasoning.
  4. Bring to a boil, then reduce heat and add the broken lasagna noodles.
  5. Cover and simmer for 15-20 minutes until noodles are tender.
  6. Stir in the ricotta cheese and half of the mozzarella until melted.
  7. Serve topped with the remaining mozzarella and Parmesan cheese.

  • For a vegetarian version, substitute ground beef with lentils or mushrooms.
