Thai Red Curry Soup

Ingredients

  • 1 tablespoon vegetable oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon red curry paste
  • 4 cups vegetable broth
  • 1 can (14 ounces) coconut milk
  • 2 cups mixed vegetables (carrots, bell peppers, and snow peas)
  • 2 tablespoons soy sauce
  • 1 tablespoon lime juice
  • 1/4 cup fresh basil leaves, chopped

Instructions

  1. In a pot, heat the vegetable oil over medium heat.
  2. Add the onion and garlic, sautéing until the onion is translucent.
  3. Stir in the red curry paste and cook for another minute.
  4. Pour in the vegetable broth and bring to a simmer.
  5. Add the coconut milk and mixed vegetables, cooking until the vegetables are tender.
  6. Stir in the soy sauce and lime juice.
  7. Remove from heat and mix in fresh basil before serving.

Notes

  • You can adjust the spiciness by adding more or less curry paste.
  • For a protein boost, consider adding tofu or chicken.
