Thai Peanut Chicken Buddha Bowl

A comforting and flavorful Buddha bowl with Thai peanut chicken.

Ingredients

  • 1 pound chicken breast
  • 1 cup brown rice
  • 1 cup broccoli florets
  • 1 cup carrots, sliced
  • 1/2 cup peanut butter
  • 1/4 cup soy sauce
  • 3 tablespoons honey
  • 1 tablespoon lime juice
  • 1 tablespoon sesame oil
  • 1/4 cup green onions, chopped

Instructions

  1. Cook the brown rice according to package instructions.
  2. In a pan, heat sesame oil and cook the chicken until done.
  3. Add broccoli and carrots, cooking until they are tender.
  4. In a bowl, mix peanut butter, soy sauce, honey, and lime juice.
  5. Toss the chicken and vegetables in the peanut sauce.
  6. Serve over the cooked brown rice and garnish with green onions.
