  • 1 pound chicken breast, sliced
  • 4 cups chicken broth
  • 1 can coconut milk
  • 2 tablespoons curry paste
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 inch ginger, grated
  • 1 red bell pepper, sliced
  • 1 cup mushrooms, sliced
  • 2 tablespoons fish sauce
  • 1 tablespoon lime juice
  • 2 green onions, sliced
  • fresh cilantro for garnish

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the chopped onion, garlic, and ginger; sauté until softened.
  3. Stir in the curry paste and cook for another minute.
  4. Add the sliced chicken and cook until no longer pink.
  5. Pour in the chicken broth and bring to a simmer.
  6. Stir in the coconut milk, bell pepper, and mushrooms.
  7. Add the fish sauce and lime juice; simmer for 10 minutes.
  8. Garnish with green onions and cilantro before serving.

Notes

  • Adjust the spice level by using more or less curry paste.
  • Vegetable options like spinach or zucchini can be added.
