Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a large skillet, heat olive oil over medium heat and sear the pork on all sides.
  3. Place the seared pork in a roasting pan with apple cider, onion, garlic, salt, pepper, and thyme.
  4. Cover with foil and roast for 3 hours, or until the pork is tender.
  5. Remove the foil during the last 30 minutes of cooking for a crispy top.
  6. Let it rest for 10 minutes before slicing and serving.
