Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine pumpkin puree, vegetable oil, sugar, egg, and vanilla.
  3. In another bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  4. Gradually add the dry ingredients to the wet mixture and stir until just combined.
  5. Pour the batter into a greased loaf pan.
  6. For the streusel topping, mix together 1/2 cup of flour, 1/4 cup of sugar, and 1/4 cup of butter until crumbly, then sprinkle on top of the batter.
  7. Bake for 50-60 minutes or until a toothpick comes out clean.
  8. Let cool before slicing.
