Sticky Roasted Carrots with Tahini Yoghurt

A delicious and easy dish combining sticky roasted carrots with a creamy tahini yoghurt sauce.

  • 1 pound carrots
  • 2 tablespoons olive oil
  • 3 tablespoons tahini
  • 1 cup yoghurt
  • 1 tablespoon lemon juice
  • 1 teaspoon garlic powder
  • Salt to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Peel and cut the carrots into sticks.
  3. Toss the carrots with olive oil, salt, and any desired seasonings.
  4. Spread the carrots on a baking sheet and roast for 20-25 minutes until tender and caramelized.
  5. In a bowl, mix tahini, yoghurt, lemon juice, and garlic powder to make the sauce.
  6. Serve the roasted carrots drizzled with tahini yoghurt and garnish with parsley.
