  • 6 large eggs
  • 1 cup fresh spinach, chopped
  • 1/2 cup bell peppers, diced
  • 1/4 cup onion, diced
  • 1/2 cup cheese, shredded
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk the eggs until well combined.
  3. Add the chopped spinach, diced bell peppers, diced onion, shredded cheese, salt, and black pepper to the eggs. Mix well.
  4. Grease a muffin tin and pour the egg mixture evenly into each muffin cup.
  5. Bake for 20-25 minutes or until the egg muffins are set and lightly golden on top.
  6. Allow to cool slightly before removing from the muffin tin.
