Spinach Egg Muffins

Delicious and healthy spinach egg muffins made with turkey bacon, perfect for breakfast or meal prep.

  • 6 large eggs
  • 1 cup fresh spinach, chopped
  • 1/2 cup turkey bacon, cooked and crumbled
  • 1/4 cup milk
  • 1/2 cup shredded cheese (cheddar or your choice)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a muffin tin.
  2. In a large bowl, whisk together the eggs and milk.
  3. Add the chopped spinach, crumbled turkey bacon, cheese, salt, and black pepper. Mix until well combined.
  4. Pour the egg mixture evenly into the muffin tin.
  5. Bake for 20-25 minutes or until the muffins are set and golden on top.
  6. Allow to cool slightly before removing from the tin.

Notes

  • These muffins can be made ahead of time and stored in the fridge for up to 4 days.
  • Feel free to add other vegetables or substitute the turkey bacon for another protein.
