  • 3 cups water

  • 1 avocado, sliced
  • 1/4 cup spicy mayo
  • 1 cucumber, thinly sliced
  • 1 sheet of nori, cut into strips

Instructions

  1. Rinse sushi rice under cold water until the water runs clear, then combine with water in a rice cooker and cook.
  2. In a small bowl, mix rice vinegar, sugar, and salt until dissolved; fold this into the cooked rice.
  3. Let the rice cool to room temperature.
  4. In a pan, sauté shrimp until pink and cooked through; allow to cool.
  5. Layer stacks by placing rice at the bottom, followed by shrimp, avocado, sliced cucumber, and drizzle with spicy mayo.
  6. Top with a strip of nori before serving.
