- 1 cup sushi rice
- 1 ½ cups water
- 1 tablespoon rice vinegar
- 1 tablespoon sugar
- ½ teaspoon salt
- 1 pound fresh salmon, skinless and boneless
- ½ cup mayonnaise
- 2 tablespoons sriracha sauce
- 1 tablespoon soy sauce
- 2 green onions, chopped
- 1 avocado, sliced
- 1 sheet nori, torn into pieces
- Preheat the oven to 375°F (190°C).
- Rinse the sushi rice under cold water until the water runs clear.
- In a pot, combine the rice and water, bring to a boil, then reduce the heat, cover, and simmer for 20 minutes.
- In a small bowl, mix the rice vinegar, sugar, and salt until dissolved. Stir into the cooked rice and let it cool.
- In a mixing bowl, flake the salmon, then combine it with mayonnaise, sriracha, and soy sauce.
- Spread the sushi rice evenly in a baking dish, top with the salmon mixture, and sprinkle with green onions.
- Bake for 20-25 minutes until heated through and slightly golden.
- Garnish with avocado slices and nori before serving.

- Serve with extra sriracha on the side for those who like it spicier.
