  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1/4 cup sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon melted butter
  • 8 slices turkey bacon

Instructions

  1. In a large bowl, mix together sour cream, eggs, sugar, vanilla, and melted butter.
  2. In another bowl, combine flour, baking powder, baking soda, and salt.
  3. Gradually add the dry ingredients to the wet mixture until just combined.
  4. Heat a non-stick skillet over medium heat and pour in batter to form pancakes.
  5. Cook pancakes until bubbles form, then flip and cook until golden brown.
  6. In the same skillet, cook turkey bacon until crispy.
  7. Serve pancakes warm with crispy turkey bacon on the side.

Notes

  • For fluffier pancakes, do not overmix the batter.
