Sopa de Ajo (Spanish Garlic Soup)

  • 6 cups chicken broth
  • 6 cloves garlic, minced
  • 4 slices turkey bacon, chopped
  • 1 large onion, diced
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 4 large eggs
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. In a large pot, heat olive oil over medium heat. Add turkey bacon and cook until crispy.
  2. Add onion and garlic to the pot, sauté until onion is translucent.
  3. Pour in chicken broth and bring to a simmer.
  4. Stir in paprika and let the soup simmer for 15 minutes.
  5. Crack the eggs into the soup, cooking them poached style until whites are set.
  6. Garnish with parsley before serving.
