Sensational Whole30 Stuffed Sweet Potatoes: 1 Amazing Dinner

  • 2 large sweet potatoes
  • 1 pound ground turkey
  • 6 slices turkey bacon, chopped
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • Salt to taste
  • 2 green onions, sliced

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash the sweet potatoes and pierce them with a fork. Bake in the oven for about 45 minutes or until tender.
  3. In a skillet over medium heat, cook the chopped turkey bacon until crispy. Remove and set aside.
  4. In the same skillet, add the diced onion and cook until translucent. Add the minced garlic and stir for an additional minute.
  5. Add the ground turkey to the skillet, along with the paprika, cumin, and salt. Cook until the turkey is browned and cooked through.
  6. Once the sweet potatoes are done, halve them and scoop out some of the flesh. Mix the flesh with the turkey mixture and the cooked turkey bacon.
  7. Stuff the sweet potato halves with the turkey and bacon mixture.
  8. Top with sliced green onions and serve.
