- 2 large sweet potatoes
- 1 pound ground turkey
- 6 slices turkey bacon, chopped
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1/2 teaspoon cumin
- Salt to taste
- 2 green onions, sliced
- Preheat the oven to 400°F (200°C).
- Wash the sweet potatoes and pierce them with a fork. Bake in the oven for about 45 minutes or until tender.
- In a skillet over medium heat, cook the chopped turkey bacon until crispy. Remove and set aside.
- In the same skillet, add the diced onion and cook until translucent. Add the minced garlic and stir for an additional minute.
- Add the ground turkey to the skillet, along with the paprika, cumin, and salt. Cook until the turkey is browned and cooked through.
- Once the sweet potatoes are done, halve them and scoop out some of the flesh. Mix the flesh with the turkey mixture and the cooked turkey bacon.
- Stuff the sweet potato halves with the turkey and bacon mixture.
- Top with sliced green onions and serve.
