Roasted Tomato and Garlic Ricotta Pasta

  • 2 cups cherry tomatoes
  • 4 cloves garlic
  • 1 tablespoon olive oil
  • 8 ounces pasta of choice
  • 1 cup ricotta cheese
  • 1/4 cup grated parmesan cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh basil, chopped

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. On a baking sheet, toss the cherry tomatoes and garlic with olive oil, salt, and pepper.
  3. Roast in the oven for 20-25 minutes until tomatoes are burst and garlic is golden.
  4. Meanwhile, cook pasta according to package instructions. Drain and set aside.
  5. In a large bowl, combine the roasted tomatoes, garlic, ricotta, and cooked pasta. Mix well.
  6. Stir in parmesan cheese and fresh basil before serving.
