Roasted Sweet Potato Kale Salad

A delicious and nutritious roasted sweet potato kale salad that’s easy to prepare.

Ingredients

Scale
  • 2 cups chopped kale
  • 1 large sweet potato
  • 1 tablespoon olive oil
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup quinoa
  • 1/4 cup dried cranberries
  • 1/4 cup walnuts
  • 2 tablespoons feta cheese

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel and cube the sweet potato.
  3. Toss the sweet potato with olive oil, salt, and pepper.
  4. Spread the sweet potato on a baking sheet and roast for 25-30 minutes.
  5. Meanwhile, cook quinoa according to package instructions.
  6. In a large bowl, combine kale, quinoa, roasted sweet potato, cranberries, walnuts, and feta cheese.
  7. Toss to combine and serve.
