  • 4 boneless, skinless chicken breasts
  • 1 cup roasted red peppers, chopped
  • 1 cup fresh spinach, chopped
  • 8 ounces mozzarella cheese, shredded
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, mix together the roasted red peppers, spinach, and mozzarella cheese.
  3. Slice a pocket into each chicken breast and stuff with the mixture.
