Ingredients

  • 2 pounds Yukon Gold potatoes
  • 1 cup heavy cream
  • 3 tablespoons roasted garlic
  • 1 cup grated Gruyere cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh thyme

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Grease a baking dish with butter.
  3. Slice the potatoes thinly and layer half in the baking dish.
  4. Spread half of the roasted garlic and sprinkle with salt, pepper, and thyme.
  5. Add half of the cheeses on top.
  6. Repeat with the remaining ingredients.
  7. Pour the heavy cream over the layers.
  8. Bake for 60-70 minutes until the top is golden brown and the potatoes are tender.
