Pumpkin S’mores Cookies

Deliciously soft Pumpkin S’mores Cookies that combine the flavors of pumpkin, chocolate, and marshmallows, perfect for fall.

  • 1 cup pumpkin puree
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon pumpkin pie spice
  • 1 cup mini chocolate chips
  • 1 cup mini marshmallows

Instructions

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, cream together pumpkin puree, brown sugar, granulated sugar, and softened butter until smooth.
  3. Add eggs one at a time, mixing well after each addition.
  4. In a separate bowl, whisk together flour, baking soda, salt, and pumpkin pie spice.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in chocolate chips and marshmallows.
  7. Drop tablespoon-sized balls of dough onto the prepared baking sheet.
  8. Bake for 12-15 minutes, or until golden brown.
  9. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

  • Serve warm for a gooey texture.
  • You can substitute some of the chocolate chips with butterscotch chips for a different flavor.
