Pumpkin Protein Pancakes

Start your fall mornings with these delicious Pumpkin Protein Pancakes that are both healthy and easy to make.

Ingredients

  • 1 cup pumpkin puree
  • 1 cup rolled oats
  • 1 scoop protein powder
  • 2 eggs
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup milk (dairy or non-dairy)

Instructions

  1. In a bowl, combine pumpkin puree, oats, protein powder, eggs, baking powder, cinnamon, nutmeg, and salt.
  2. Mix in the milk until the batter is smooth.
  3. Heat a non-stick skillet over medium heat.
  4. Pour 1/4 cup of batter for each pancake onto the skillet.
  5. Cook until bubbles form on the surface, then flip and cook until golden brown.
  6. Serve warm with maple syrup or your choice of toppings.

Notes

  • For added sweetness, consider adding a tablespoon of maple syrup or honey into the batter.
