- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, melted
- 1 can (15 ounces) pumpkin puree
- 3/4 cup brown sugar
- 4 large eggs
- 2 teaspoons ground cinnamon
- 1 teaspoon ground nutmeg
- 1 teaspoon vanilla extract
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
- In a bowl, combine flour, granulated sugar and salt.
- Mix in the melted butter until crumbly.
- Press the mixture into the bottom of the baking dish.
- In another bowl, whisk together pumpkin puree, brown sugar, eggs, cinnamon, nutmeg, and vanilla.
- Pour the pumpkin mixture over the crust in the baking dish.
- Bake for 30-35 minutes or until a toothpick comes out clean.
- Allow to cool before cutting into bars.
