  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 1 can (15 ounces) pumpkin puree
  • 3/4 cup brown sugar
  • 4 large eggs
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. In a bowl, combine flour, granulated sugar and salt.
  3. Mix in the melted butter until crumbly.
  4. Press the mixture into the bottom of the baking dish.
  5. In another bowl, whisk together pumpkin puree, brown sugar, eggs, cinnamon, nutmeg, and vanilla.
  6. Pour the pumpkin mixture over the crust in the baking dish.
  7. Bake for 30-35 minutes or until a toothpick comes out clean.
  8. Allow to cool before cutting into bars.

Notes

  • Serve with whipped cream for added indulgence.
  • These bars can be made a day in advance for easier serving.
