  • 2 cups heavy cream
  • 1 cup pumpkin puree
  • 1 teaspoon vanilla extract
  • 1 teaspoon pumpkin spice
  • 1/2 cup granulated sugar
  • 6 egg yolks
  • 1/4 cup brown sugar (for topping)

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a saucepan, heat the heavy cream over medium heat until it just begins to simmer.
  3. In a mixing bowl, whisk together the pumpkin puree, vanilla extract, pumpkin spice, and granulated sugar.
  4. Add the hot cream to the pumpkin mixture, stirring continuously.
  5. In another bowl, whisk the egg yolks until they are pale, then slowly mix in the pumpkin mixture.
  6. Divide the mixture into ramekins and place them in a baking dish filled with hot water.
  7. Bake for 30-35 minutes, or until set but still slightly wobbly in the center.
  8. Refrigerate for at least 2 hours before serving.
  9. Before serving, sprinkle brown sugar on top of each ramekin and use a kitchen torch to melt and caramelize the sugar.

  • For a smoother texture, strain the mixture before baking.
  • Don’t skip the chilling time; it enhances the flavors.
