Ingredients

  • 8 oz cream cheese, softened
  • 1 cup powdered sugar

  • 1 tsp pumpkin pie spice
  • 2 cups graham cracker crumbs
  • 1 1/2 cups white chocolate chips
  • 1 tbsp coconut oil

Instructions

  1. In a mixing bowl, combine pumpkin puree, softened cream cheese, powdered sugar, vanilla extract, and pumpkin pie spice until smooth.
  2. Refrigerate the mixture for at least 1 hour until it firms up.
  3. Once firm, scoop out small amounts of the mixture and roll into balls.
  4. Roll the truffles in graham cracker crumbs until fully coated.
  5. Melt white chocolate chips with coconut oil in a microwave-safe bowl.
  6. Dip each truffle in the melted chocolate and place on a parchment-lined tray.
