- 1 pound pork shoulder, cut into cubes
- 6 slices turkey bacon, chopped
- 2 cups apples, peeled and cubed
- 1 cup prunes, pitted
- 1 large onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 teaspoon thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- In a large pot, cook the turkey bacon over medium heat until crispy. Remove and set aside.
- In the same pot, add the pork shoulder and brown on all sides.
- Add onion and garlic, sauté until translucent.
- Stir in apples and prunes, followed by chicken broth, thyme, salt, and pepper.
- Bring to a boil, then reduce heat and let simmer for 1.5 hours.
- Once cooked, stir in the crispy turkey bacon before serving.
