Pizza Enchiladas Ground Beef Pepperoni

A delicious fusion of pizza and enchiladas that is easy to prepare and perfect for family dinners.

  • 1 pound ground beef
  • 1 cup pepperoni, chopped
  • 2 cups shredded mozzarella cheese
  • 1 cup enchilada sauce
  • 8 flour tortillas
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, brown the ground beef over medium heat until fully cooked. Drain excess fat.
  3. Add chopped pepperoni, enchilada sauce, Italian seasoning, garlic, and onion powder to the skillet. Mix well and heat through.
  4. Lay out a tortilla and spoon a portion of the beef mixture down the center.
  5. Sprinkle with mozzarella cheese, then roll up the tortilla and place it seam-side down in a baking dish.
  6. Repeat with remaining tortillas and beef mixture.
  7. Top the rolled enchiladas with any remaining sauce and cheese.
  8. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.

  • Feel free to add your favorite pizza toppings such as bell peppers or olives.
  • This dish can be made ahead and frozen for later use.
