Ingredients

  • 1 and 1/2 cups pistachio nuts, shelled
  • 1 cup cream cheese, softened
  • 1/2 cup granulated sugar
  • 1/2 cup heavy cream
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon all-purpose flour
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a food processor, blend the pistachios until finely ground.
  3. In a large bowl, beat the cream cheese and sugar together until smooth.
  4. Add the heavy cream, eggs, vanilla, flour, and salt. Mix until well combined.
  5. Fold in the ground pistachios.
  6. Pour the mixture into a greased springform pan.
  7. Bake for 50-60 minutes, until the center is set.
  8. Let cool, then refrigerate for at least 4 hours before serving.
