Pistachio and Mushroom Cheesecake with Feta & Parmesan Crust

A rich and creamy cheesecake featuring a unique blend of pistachios and mushrooms, complemented by a delicious feta and Parmesan crust.

  • 1 cup pistachios
  • 1 cup mushrooms, finely chopped
  • 8 ounces cream cheese
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup Parmesan cheese, grated
  • 1/4 cup heavy cream
  • 3 large eggs
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon fresh herbs (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a food processor, combine the pistachios and mushrooms, blending until finely chopped.
  3. In a mixing bowl, beat the cream cheese, feta, and Parmesan until smooth.
  4. Add the heavy cream and eggs, mixing well.
  5. Stir in the chopped pistachios and mushrooms, garlic powder, salt, and pepper.
  6. Pour the mixture into a greased springform pan.
  7. Bake for 35-40 minutes or until the center is set.
  8. Let cool before serving.

Notes

  • For added texture, reserve some chopped pistachios to sprinkle on top before serving.
  • This cheesecake can be made a day in advance for deeper flavors.
