  • 1/2 cup unsalted butter, melted
  • 1 cup sugar, divided
  • 3 cream cheese packages (8 oz each), softened
  • 3 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup sour cream
  • 4 cups fresh peaches, sliced
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, mix graham cracker crumbs with melted butter and 1/4 cup sugar, then press into the bottom of a springform pan.
  3. In a large mixing bowl, beat together cream cheese and remaining sugar until smooth.
  4. Add eggs one at a time, mixing well after each addition, then stir in vanilla and sour cream.
  5. Pour the cream cheese mixture over the crust.
  6. In another bowl, combine sliced peaches, lemon juice, cornstarch, and cinnamon; layer over the cheesecake batter.
  7. Bake for about 1 hour or until the center is set. Let it cool.
  8. Chill in the refrigerator for at least 4 hours before serving.
