Parmesan Zucchini Bites

Deliciously crunchy bites made from fresh zucchini and Parmesan cheese, perfect for snacking!

Ingredients

  • 2 medium zucchinis
  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs
  • 2 large eggs
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried oregano

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Grate the zucchinis and squeeze out excess moisture.
  3. In a bowl, mix zucchinis, Parmesan cheese, breadcrumbs, eggs, garlic, salt, pepper, and oregano.
  4. Form mixture into small bites and place on a baking sheet.
  5. Bake for 20-25 minutes or until golden brown.
