- 2 cups jasmine rice
- 1 can coconut milk
- 4 cups chicken broth
- 1.5 pounds chicken thighs
- 2 tablespoons soy sauce
- 1 tablespoon brown sugar
- 2 teaspoons ginger, minced
- 3 cloves garlic, minced
- 1 teaspoon salt
- 1 green onion for garnish
- In a large pot, heat some oil over medium heat.
- Add the chicken thighs and sear until golden brown.
- Remove the chicken and set it aside.
- In the same pot, sauté garlic and ginger until fragrant.
- Add rice and stir to coat.
- Pour in coconut milk and chicken broth, then return the chicken to the pot.
- Add soy sauce and brown sugar, then bring it to a simmer.
- Cover and cook for about 20 minutes, or until rice is tender.
- Fluff the rice and serve garnished with green onions.
Notes
- For extra flavor, marinate the chicken in soy sauce and ginger for a few hours before cooking.
