One Pot Sticky Coconut Rice & Chicken

  • 2 cups jasmine rice
  • 1 can coconut milk
  • 4 cups chicken broth
  • 1.5 pounds chicken thighs
  • 2 tablespoons soy sauce
  • 1 tablespoon brown sugar
  • 2 teaspoons ginger, minced
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • 1 green onion for garnish

Instructions

  1. In a large pot, heat some oil over medium heat.
  2. Add the chicken thighs and sear until golden brown.
  3. Remove the chicken and set it aside.
  4. In the same pot, sauté garlic and ginger until fragrant.
  5. Add rice and stir to coat.
  6. Pour in coconut milk and chicken broth, then return the chicken to the pot.
  7. Add soy sauce and brown sugar, then bring it to a simmer.
  8. Cover and cook for about 20 minutes, or until rice is tender.
  9. Fluff the rice and serve garnished with green onions.

Notes

  • For extra flavor, marinate the chicken in soy sauce and ginger for a few hours before cooking.
  • This dish can be served with a side of steamed vegetables.
