One Pot Chicken Shawarma Rice: Bold Middle Eastern Flavors in a Simple Dinner

  • 1 pound chicken thighs
  • 2 cups basmati rice
  • 1 tablespoon shawarma spice blend
  • 4 cups chicken broth
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh parsley, chopped
  • 1 lemon, juiced

Instructions

  1. In a large pot, heat oil over medium heat and sauté onions until translucent.
  2. Add garlic and chicken thighs, cooking until browned.
  3. Stir in rice and shawarma spice until well-coated.
  4. Pour in chicken broth and bring to a boil.
  5. Reduce heat, cover, and simmer for 20 minutes.
  6. Add cherry tomatoes and parsley, and stir gently.
  7. Remove from heat and let sit for 5 minutes before serving.

Notes

  • For extra flavor, marinate chicken in shawarma spices for a few hours before cooking.
  • Serve with a side of yogurt or tahini sauce for dipping.
