One-pan Lemon Orzo and Salmon

A delicious and simple one-pan recipe that combines lemony orzo with perfectly cooked salmon, ideal for family dinners.

  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1 pound salmon fillets
  • 1 tablespoon olive oil
  • 2 lemons, zested and juiced
  • 2 cloves garlic, minced
  • 1/4 cup parsley, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Add minced garlic and sauté for 1 minute until fragrant.
  3. Add the orzo pasta and stir for 2-3 minutes.
  4. Pour in the chicken broth, lemon juice, salt, and pepper; bring to a simmer.
  5. Add the salmon fillets on top of the orzo.
  6. Cover and cook for 10-12 minutes until salmon is cooked through.
  7. Remove from heat and stir in lemon zest and parsley.
  8. Serve warm with additional lemon wedges if desired.
