  • 4 ripe nectarines, sliced
  • 1/2 cup unsalted butter
  • 1 cup brown sugar
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup milk

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, melt the butter over medium heat, then add brown sugar and stir until dissolved.
  3. Arrange the nectarines in the bottom of a greased cake pan, pouring the butter mixture over them.
  4. In a bowl, mix flour, baking powder, and salt. In another bowl, beat the eggs, and then add granulated sugar and vanilla.
  5. Combine the wet and dry ingredients and mix in the milk.
  6. Pour the batter over the nectarines.
  7. Bake for 30-35 minutes or until a toothpick comes out clean.
  8. Allow to cool for 10 minutes, then invert onto a plate.

Notes

  • For extra flavor, add a pinch of cinnamon to the batter.
