  • 1 pound rotisserie chicken, shredded
  • 1 cup frozen mixed vegetables
  • 1 cup turkey bacon, chopped
  • 1/4 cup onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 1 cup chicken broth
  • 1/2 cup milk
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 package refrigerated pie crusts

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a skillet, heat olive oil over medium heat. Add chopped onion and garlic, sauté until softened.
  3. Stir in turkey bacon and cook until crispy.
  4. Add shredded chicken, mixed vegetables, flour, chicken broth, milk, Worcestershire sauce, thyme, salt, and pepper. Cook until thickened.
  5. Roll out the pie crust and cut into circles. Press into muffin tins.
  6. Fill each crust with the chicken mixture.
  7. Top with remaining pie crust circles.
  8. Bake for 20-25 minutes or until golden brown.
  9. Let cool for a few minutes before serving.

Notes

  • For a vegetarian version, use mushrooms instead of chicken and vegetable broth.
  • You can prepare the filling ahead of time and assemble the pot pies just before baking.
