  • 4 roasted poblano peppers
  • 1 tablespoon olive oil
  • 1 yellow onion, diced
  • 2 garlic cloves, minced
  • 4 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. Roast the poblano peppers over an open flame until charred, then place them in a bowl covered with plastic wrap to steam.
  2. Heat olive oil in a pot over medium heat and add onions and garlic, sauté until translucent.
  3. Peel and chop the roasted poblanos, then add them to the pot.
  4. Pour in the vegetable broth and add cumin, simmer for about 20 minutes.
  5. Blend the soup until smooth, then stir in the heavy cream.
  6. Season with salt and pepper to taste.
