- 4 roasted poblano peppers
- 1 tablespoon olive oil
- 1 yellow onion, diced
- 2 garlic cloves, minced
- 4 cups vegetable broth
- 1 teaspoon ground cumin
- 1 cup heavy cream
- Salt and pepper to taste
- Roast the poblano peppers over an open flame until charred, then place them in a bowl covered with plastic wrap to steam.
