Moroccan Fish Tagine with Ginger & Saffron

  • 2 pounds firm white fish fillets
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon saffron threads
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 can (14 ounces) diced tomatoes
  • 1/4 cup olive oil
  • 1/2 cup green olives, pitted and sliced
  • 1/4 cup fresh cilantro, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 lemon juiced

Instructions

  1. Heat olive oil in a large tagine or skillet over medium heat.
  2. Add the chopped onion, garlic, and ginger. Sauté until the onions are soft and translucent.
  3. Stir in the saffron, cumin, coriander, salt, and pepper.
  4. Add the diced tomatoes and bring to a simmer.
  5. Gently lay the fish fillets on top of the sauce and cover. Cook for about 10-15 minutes until the fish is cooked through.
  6. Add olives and cilantro before serving, drizzle with lemon juice.
