Mediterranean Salmon Bowl

A delicious and healthy Mediterranean salmon bowl made with fresh ingredients.

Ingredients

  • 2 salmon fillets
  • 1 cup cooked quinoa
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup olives, sliced
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Place the salmon fillets on a baking sheet and drizzle with olive oil, lemon juice, oregano, salt, and pepper.
  3. Bake for 12-15 minutes or until the salmon is cooked through.
  4. In a bowl, combine cooked quinoa, cherry tomatoes, cucumber, red onion, feta, and olives.
  5. Flake the salmon and add it to the bowl.
  6. Toss gently to combine and serve.

  • Feel free to add other vegetables like bell peppers or spinach.
